Recipe of the Week – Pork Loin with Red Sauce

There was plenty for dinner (for 2,) plus I put 2 servings in the freezer for lunches.  I used pork loin chops instead of a whole pork loin.  It cooked a little faster and I don't think it tasted any different.

Pork Loin with Red Sauce

2             pounds  pork tenderloin -- (1 tenderloin)
15 1/2        ounces  stewed tomatoes -- (14-ounces) drained
6             ounces  tomato paste -- (6-ounces)
2          teaspoons  basil
1           teaspoon  oregano
1         tablespoon  minced garlic
1                     chopped green pepper
1                     red pepper
1         tablespoon  stevia -- cut up and mashed

Place pork loin far side up in crockpot. Combine remaining ingredients except Splenda and pour over pork loin. Cook on low for 8 hours.

Carefully remove pork from the crockpot. Scrap tomato mixture off of the pork loin and put mixture back into crockpot.

Add Splenda to sauce and stir. Cook uncovered on high for 15 minutes. Serve pork loin sliced with sauce on top.
